Pithe

Pithes are typically prepared with rice flour or wheat flour and enhanced with various sweet fillings. They come in different shapes and sizes and are usually associated with winter festivals like Makar Sankranti. Thin crepes, made with a batter of rice or wheat flour and milk, are filled with a mixture of coconut, khoya and jaggery and then rolled into a cylindrical shape or folded into a triangle.
