Phulkopir singara is a popular Bengali snack that features a spiced filling of cauliflower (phulkopi) encased in a thin, crispy pastry shell. It is a regional variation of the commonly known samosa, with the unique twist of using cauliflower as the primary filling, thanks to the widespread availability of the vegetable during the winter. The cauliflower is finely chopped or grated and then spiced with a blend of aromatic spices such as cumin, coriander, turmeric and chilli powder. The outer covering is made from thin, unleavened dough, typically prepared with all-purpose flour (maida) or a mixture of wheat flour and all-purpose flour. While the classic version features cauliflower as the main filling, some variations may include a mix of potatoes, a Bengali favourite—and cauliflower for some added texture and flavour.
