Ghugni Chaat

Ghugni is a dried yellow pea curry served with a generous sprinkling of onions, green chillies, a dash of lime juice, coriander leaves and bhaja masala (roasted hand-pounded spice mix). This is a popular all-day snack in West Bengal that is served hot in small sal leaf bowls on its own or with a kulcha. The stalls outside Vardaan Market do a nifty bowl of ghugni with all the works.
